Antoshimo blending Western and Japanese cooking methods and flavors, this is the unique culture of Okinawa. “Two-tier cooking” refers to steaming in the upper tier and cooking in the lower tier. The upper tier uses a steamer, while the lower tier uses a stone pot. Steam passes through the steamer to quickly cook the food thoroughly while preserving its flavor.
